I love the trend of transforming vegetables into something new — everything from noodles and rice to pizza crust and burgers.  That was the topic of my recent post for U.S. News & World Report: A New View of Vegetables: 7 Ways to Change Your Current Approach to Produce.

The vegetable recipes pictured above,  all from talented Healthy Aperture bloggers, help bring this trend to life. Check out these clever veggie hacks:

Thank you so much for including my raw zucchini noodles and asparagus fries in your write up! What a great group of recipes. I’ll be checking the others out for sure!

  • Love the cauliflower pizza crust!! Makes pizza tasty and healthy!!

  • I just made a meatloaf with all veggies— lentils, carrots, red beans, onion, etc. I couldn’t believe it turned out with the same texture and color as meatloaf. The problem is I have no idea what to call it! Veggie loaf just sounds gross.

  • I’ve been meaning to try that cauliflower rice. Is it really good? I just made chocolate cake with beets and avocado! Pretty proud of that one!
